I like to imagine it's white. Scientifically, I imagine all sperm are white. But, by Splatoon logic, probably their ink colors. We don't know much about their bodies - like what color their blood is - but it just kinda... Makes sense with general assumptions you can make about inkling/octoling biology with the extremely limited information we have.
